Pancake Week

Pancake Week (or Maslenitsa) is a traditional holiday that falls on the last week before Easter Lent. As in many other countries, in Ukraine, Maslenitsa days are associated with pancake with pancakes, which are prepared in a variety of ways. In 2026, this holiday is celebrated from February 16 to February 22.

The most popular recipe is thin lace pancakes with milk or kefir, which are served with butter, sour cream, honey or cottage cheese.

Preparation:

  1. Beat eggs with salt and sugar, add kefir.
  2. Add flour and soda, mix thoroughly so that there are no lumps.
  3. Add boiling water (for lace) and oil. Leave the dough to "rest" for 20-30 minutes.
  4. Fry pancakes in a hot pan on both sides.
  5. Butter the finished pancake.
